Welcome - this is my first post! I am at the beach and only a few items in the pantry. I decided to try making chickpea salad. I have been wanting to try something like this for so long as I had a nice chickpea salad sandwich once at a restaurant. I had the ingredients on hand and needed to use up before I leave. I am usually a recipe follower if I am making something for a family gathering but since it is just my husband and I, it is fine to go with instincts.
Garbanzo beans are the type of fiber needed for a healthy micorbiome. The healthy bacteria thrive when we feed them healthy fiber especially from garbanzo beans, so choosing this type of salad is tasty and good for our gut! My husband is not a fan of garbanzo beans but he did like this salad. I always know a recipe is a keeper when my husband or kids like it. I hope you do too.
Ingredients:
1 can garbanzo beans (organic, BPA free), rinsed
2 Tbsp mayonaise (I just scraped what was left in the container)
1/2 avocado
Chives, minced
Parsley, minced
Celery, chopped fine
Juice of 1/2 lemon
salt & pepper
Preparation:
1. Rinse garbanzo beans and mash lightly leaving some whole beans.
2. Add mayonnaise, avocado, chives, parsley, celery, lemon juice, salt and pepper - mix to combine. Taste and add more salt & pepper as needed.
